Chorizo

Chorizo is definitely the food of the moment for me right now. Most weeks I buy some and it becomes my very easy, but very gourmet dinner. It’s brilliant if friends pop in on a Saturday and stay for dinner, because it’s fast & deliciousLeigh good, and a bit goes a long way! Here are a couple of ideas of what goes well.


Chorizo & Olives with Spaghetti
Ingredients
1 clove of garlic
2-3 Chorizo sausages
200g Olives (smashed with the side of a big knife blade)
1 Punnet of cherry tomatoes
Spaghetti
Parmesan Cheese

Method
Heat some oil in a pan, put in garlic and cook for 1 min.
Add sliced Chorizo and smashed olives and heat through for about 4 mins.
Add a punnet of halved cherry tomatoes (or even worse case scenario a tin of chopped tomatoes – good quality, not too much water)
Heat through thoroughly.
Bring a pan of water to the boil, add Spaghetti and cook. Drain, and add to the tomato mixture.
Mix well & serve with a good sprinkling of Parmesan Cheese


Chorizo, Pine Nuts & Rocket Salad
Ingredients
1 clove of garlic
2-3 Chorizo sausages
Handful of Pine nuts
Handful Rocket
Ricotta Cheese
Penne Pasta

Method
Heat some oil in a pan, put in garlic and cook for 1 min.
Add sliced Chorizo and Pine nuts and cook, stirring often to ensure the pine nuts don’t burn
Bring a pan of water to the boil, add Penne pasta and cook. Drain, and add to the chorizo mixture.
While still on the heat, add the ricotta cheese, and mix everything well.
Remove from heat, and add the Rocket.
Mix well & serve with a good sprinkling of Parmesan Cheese

on the topic of chorizo, hubby is an addict too. but it's blowing our kids' heads off.
maybe they shouldn't eat it chopped on top of their nutrigrain??

i just have to say, at this point, that i'm starting to get enthused about food again.
but i didn't make the chicken pie. i was threading pearls instead, so i got D18 to make a Very Sexy Chicken and Feta and Olives and Mesclun Salad. i made the potato wedges.
and now hubby has brought me home my newest addiction:
a memphis meltdown BIG BIKKIE ice cream.... X
